Cake Mix 3 Ways

I have been loving the cake mixes lately- must be the cooler fall weather. So I thought I'd share my 3 favorite things to do with a cake mix. These recipes are easy and delicious.

Pie Filling Cake
Blend one cake mix with 2 eggs and 1-2 cans of pie filling. Bake at 350 for 25-30 minutes, or until cake tests done. You can frost it, glaze it, or it's delicious plain!
Some delicious combinations: apple pie filling with yellow or spice cake; cherry pie filling with cherry chip or chocolate cake.

Pumpkin Spice Cookies
Blend one spice cake mix with one 15-ounce can pumpkin. (Alternately, you could use a can of pumpkin pie filling.) You can cook them like that, or mix in chocolate chips or cinnamon chips first. Bake at 350 for 12 minutes.

Trifle
A favorite, and so versatile!
Bake a cake mix according to box directions, using a 9 x 13 pan. Cool.
Mix up two small, or one large, boxes of instant pudding.
Prepare other add-ins, such as sliced fruit, candy bar pieces, etc.
Now, cut up the cake into small chunks (1 inch or so.) Layer in a bowl cake mix, pudding, add-ins, and cool whip. Repeat, ending with cool whip on top.
You can really mix any cake and pudding flavor you like. One of our favorites has been lemon cake with vanilla pudding and blueberries. Yum!

mmm...those sound delish! I just stocked up on cake mixes and brownie mixes for 88cents each...i really love them too.

Those sound really good. I will have to try the Pumpkin cookies with chocolate chips! The remodeling looks like it is coming along.
